It’s no secret that Ben does the cooking at our house for dinner. He enjoys doing it and I enjoy finding recipes on Pinterest for him to recreate, with his own spin on them of course. It’s a system that works well for us. That’s why he was considerably taken back when I recently offered to make dinner for the two of us, “date night in” style. I had a few tricks up my sleeve when I offered, which I didn’t immediately divulge to him. Cue: American Flatbread Pizza.

American Flatbread Pizza makes your “date night in” a piece of cake – or I guess in this case, pizza. Their pizzas are made with real ingredients that pack a fresh taste. It makes it hard to believe that they were ever frozen in the first place. I chose to pickup a variety of pizza flavors for Ben and I’s rendezvous: the Uncured Pepperoni & Uncured Bacon, the Tomato Sauce & Three Cheese, and Revolution. The beauty of date night is having a menu of options to choose from, so I thought picking up a variety was the perfect way to incorporate that aspect. I was able to find American Flatbread Pizza at our local Publix on their frozen pizza aisle. You can find them at your local Publix here.

Knowing that Ben loves his side dishes, I knew I had to put together a quick and easy side option that would pair well with our pizzas. Not to mention pair well with my kitchen skill level. Mini tomato, mozzarella, and basil skewers immediately came to mind. How hard could it be to stack ingredients one by one on a toothpick? It was clearly something I could handle. I’m including an easy tutorial at the bottom of this post for you to recreate them.

When our planned “date night in” arrived, I was ready. I had my American Flatbread Pizzas in the oven as I prepared the mini skewers. Multitasking in the kitchen, who am I? It all came together without a hitch. Ben and I excitedly cozied up on the couch with our platter of pizzas and a few movies to watch. We taste tested each pizza slice claiming our favorites: Revolution for Ben and Uncured Pepperoni & Uncured Bacon for me. The ingredients on both were perfectly paired and the sauce (consisting of a variety of veggies, red wine, and olive oil) was uniquely spot on.

The kitchen can be a scary place to navigate, but with the help of American Flatbread Pizza I was able to successfully pull off a “date night in.” I’m happily giving back the kitchen reins to Benny Boy, but it feels good to know that I can survive on making more than just microwavable meals. Hopefully Ben doesn’t get too used to it.

How to Make the Easiest Mini Tomato, Mozzarella, and Basil Skewers

  1. You’ll need: mini tomatoes, mozzarella pearls, basil leaves, balsamic glaze (optional), bamboo toothpicks
  2. Place your ingredients in an easy to assemble lineup
  3. Slide mini tomato onto toothpick
  4. Slide mozzarella onto toothpick
  5. Fold basil leaf and slide onto toothpick (if the leaf is too large for your liking, then tear in half)
  6. Once you’ve completed assembling all of your mini skewers, pour balsamic glaze onto spoon, and drizzle over the top of the mini skewers
