Pizza is a food that we all love around here. Celebrating? Have pizza. Breakfast? Have pizza, but only if it’s cold. Date night in with your husband? Have pizza, but kick it up a notch with chicken, pesto, feta, and Muir Glen’s fire roasted diced tomatoes. It’s truly a do-all food for any occasion hence why it’s always so well received.
Ben and I enjoy a nice date night out, but we’re no strangers to a relaxing date night in. Usually Ben does the cooking while I hover in the kitchen capturing him on my Instagram Story like he has his own cooking show. It’s a process that works well for us (and anyone who watches).




Recently we had a date night in with a pretty fantastic Chicken Pesto Pizza. Now it’s no secret that I’m a BIG fan of pesto. It serves as the sauce layer for this pizza and gives it such a savory, herby tone. Topped off with feta and Muir Glen’s fire roasted diced tomatoes, it sealed the deal as a dinner option we’ll repeat again.
Muir Glen’s tomatoes are grown in the Sacramento Valley of California. I loved getting the chance to work with Muir Glen and incorporate their canned tomatoes into this pizza recipe. Their fire roasted diced tomatoes brought a fresh POW to this pizza. They were a much-needed element considering we swapped out traditional tomato sauce for pesto in this recipe.




To create this pizza for our date night in, we picked up all of the ingredients at our local Whole Foods. A visit to that store is a foodie adventure for me every time. I could spend hours there browsing aisles and looking for new foods to try. Most item also come in single serve options so you can easily try “one of these” or “one of those”. As someone who loves discovering new foods and snacks, Whole Foods is truly a happy place for me.

While we used ours for pizza, you could easily use Muir Glen’s tomatoes for a variety of dishes including soups, grilled cheese, bruschetta, and more. Chicken Pesto Pizza with Feta and Fire Roasted Tomatoes
Prep time: 10 minutes
Cook time: 15 minutes
Yield: serves or makes 2
Ingredients
1 prebaked pizza crust
1/2 cup pesto
1 1/2 cups shredded mozzarella cheese
1 cup cooked and shredded chicken breast
1/2 cup Muir Glen Fire Roasted Tomatoes
1/4 cup crumbled feta cheese
(optional) for garnish Crushed red pepper flakes
freshly grated, for garnish Parmesan cheese
Method
Step 1: Preheat your oven to 400 ̊F.
Step 2: Top pizza crust with pesto, spread evenly and outwardly to edges of the pizza crust, then layer with mozzarella cheese, chicken and diced tomatoes.
Step 3: Top off pizza with crumbled feta cheese (I like to go heavy here because I love feta cheese, but you can go light if you don’t want too much feta).
Step 4: Once oven is preheated, place pizza directly on rack, and bake for 12 – 15 minutes.
Step 5: Remove from oven, let cool, and serve.
Step 6: Optional: garnish with red pepper flakes for spice and freshly grated Parmesan cheese for a rustic touch.
